The Casa Ravello way

Four ingredients. One long night.

We start tomorrow’s loaf today. Flour milled on stone, water, salt and a levain we feed twice a day. It rests through the night, is shaped by hand before dawn, and goes into a wood-fired deck oven that has not cooled since Tuesday.

Nothing is added that your grandmother wouldn’t recognise. Nothing is rushed that shouldn’t be.

The levain wakes. We check the ferment by smell and by eye.

Dough is divided, rounded and shaped by hand. Butter is laminated for the pastries.

Pastries first, then the loaves at 7:10, into a hot, steamy deck.

07:10 · Wrap

Butcher paper, straw twine, a knot. Then it’s yours.
